Aromas of orange zest, peach, oyster shells, white flowers and freshly baked bread preface the 2021 Chablis Grand Cru Les Clos, a full-bodied, layered and textural wine of impressive breadth and depth in this vintage, exhibiting considerable concentration and concluding with a long, electric finish. This will delight Chablis purists. The 2020 vintage marked the first year of official organic conversion for 78-hectare Domaine William Fèvre, though it's actually the 15th year the estate has been practicing organic, so the team took the challenges of the 2021 vintage in their stride. When I asked Didier Séguier how he managed to farm such a large estate this way, when so many smaller producers balk at the challenge, he explained that part of the secret has been fully engaging the Fèvre team: everyone is trained to spot signs of mildew and disease and share them on a team WhatsApp group; there are even prizes for the most vigilant employees. The approach certainly seems to have paid off in 2021, in any case, delivering wines with an old-school aesthetic but contemporary precision and charm; and the fact that they are bottled under Diam means that their gracious evolution in the cellar is assured. While the 2021s can't quite match the sheer concentration and intensity of 2019 and 2020, their classical profiles and clear differentiation by site will delight Chablis purists. A deft application of wood frames the beautifully elegant nose of essence of pear, green apple, acacia blossom, lemon rind and a plethora of classic Chablis scents. The dense and unusually powerful large-scaled flavors don't have the muscle of the Valmur but they're finer, all wrapped in a massively persistent and even more complex finale. The 2021 Chablis Les Preuses Grand Cru comes from 2.5-hectares split over two parcels. This has one of my favourite aromatics from Fèvre this year with superb delineation and mineralité. The palate is harmonious and poised, very focused and tensile, plenty of energy with a touch of lime and clementine towards the persistent finish. Not racked. Richness from the plateau part and more mineral from the side which goes downslope into the valley of Vaudésir. More lime in the colour here. A vigorous energetic bouquet. Impressive density with a firm line of acidity, good length, east facing but winning the blend at the moment, little lemony touches at the finish. Almost a tannic finish. Drink from 2027-2034.
